  • 1 teaspoon vanilla extract
  • Cocoa powder for dusting

Instructions:

  1. Preheat the Oven:
    • Preheat the oven to 325°F (160°C). Line a 9-inch springform pan with parchment paper and grease the sides.
  2. Prepare the Crust:
    • In a bowl, combine crushed ladyfingers, melted butter, and cocoa powder.
    • Press the mixture firmly into the bottom of the springform pan. Bake for 10 minutes, then set aside to cool.

  4. Assemble the Cheesecake:
    • Pour the filling over the prepared crust. Use a spatula to even out the surface.

    • Place the springform pan inside a larger roasting pan. Fill the roasting pan with hot water halfway up the sides of the cheesecake pan (water bath method).
    • Bake for 60-70 minutes, or until the center is slightly jiggly but the edges are set.
  6. Cool and Chill:
    • Turn off the oven and leave the cheesecake inside with the door slightly open for 1 hour.
    • Transfer the cheesecake to the fridge and chill for at least 4 hours or overnight.
  7. Prepare the Whipped Cream Topping:
    • In a bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  8. Serve:
    • Remove the cheesecake from the pan. Spread or pipe the whipped cream on top and dust generously with cocoa powder. Slice and enjoy!
